Ingredients
50g Cocoa
6 tbsp Boiling Water
5 Eggs
250g Soft Butter
250g Caster Sugar
250g Self-Raising Flour
3 tsp Baking Powder
3 tbsp Milk
225g Apricot Jam
For the icing:
50g Butter
50g Cocoa
350g Icing Sugar, sieved
About 3 tbsp Milk
Method
- Preheat the oven to 180 degrees celsius
- Measure the cocoa into a bowl and mix with boiling water to form a smooth paste
- Add in the remaining ingredients for the cake, apart from the jam
- Beat until a smooth mixture
- Spread evenly in the tin
- Bake in the oven for about 30 mins, until springy and the edges shrink away from the sides
- Leave to cool for a bit in the tin, before turning out onto a wire rack to cool completely
- Once cooled, before icing, spread the jam over the cake
For the icing:
- Melt the butter gently in a pan
- Add the cocoa and stir well for a minute
- Remove from heat, add the icing sugar and milk and mix well until smooth
- Leave to set to a spreading consistency, before pouring and spreading evenly over the cake
Decorate and enjoy!
